Ingredients
- 2 medium eggs
- 2 slices wholegrain bread
- Small glass kefir (about 150ml)
- Sea salt and black pepper, to taste
Method
- Bring a small saucepan of water to the boil. Lower in the eggs and simmer gently for 6 minutes for soft-boiled.
- While the eggs cook, toast the wholegrain bread until golden.
- Peel the eggs or serve in egg cups with the toast on the side for dipping.
- Pour a small glass of kefir and serve everything together.
Serving & storage
Tip: Enjoy straight away for best texture. For meal prep, pre-cook eggs to medium, chill, and reheat briefly in hot water before serving.
