Chewy date and almond bliss balls rolled in coconut with a touch of sea salt. A simple, no bake treat with natural sweetness and a salted caramel flavour.

Makes 8 balls 10 mins + chill No bake 160kcal 2.5g fibre

Ingredients

  • 150g soft pitted dates (Medjool or soaked Deglet Noor)
  • 2 tbsp almond butter (or peanut butter)
  • 1 tsp vanilla extract
  • Pinch of fine sea salt
  • 25g desiccated coconut, plus extra for rolling

Method

  1. Blend the dates, almond butter, vanilla and salt in a food processor to a sticky paste.
  2. Add the desiccated coconut and pulse to combine.
  3. Roll the mixture into eight even balls (lightly oil your hands if sticky), then roll in extra coconut.
  4. Chill for 20 to 30 minutes to firm up before serving.

Serving and storage

Tip: Store in an airtight container in the fridge for up to five days, or freeze for up to one month. Sprinkle with a little flaky salt before serving for an extra caramel pop.
