Ingredients

  • 2 rye crispbreads (e.g. Ryvita)
  • 1 ripe avocado, mashed
  • 1 tbsp pumpkin seeds
  • 100g cooked chicken breast, thinly sliced
  • Handful dried apricots (about 30g)

Method

  1. Mash the avocado in a small bowl with a pinch of salt and pepper if desired.
  2. Spread evenly over the rye crispbreads.
  3. Top with sliced chicken breast and sprinkle with pumpkin seeds.
  4. Serve with dried apricots on the side.
