A bright, crunchy mix of grated carrot, raisins, walnuts and poppy seeds — simple, speedy and naturally high in fibre.

Serves 1 ~5 mins Vegan 206kcal 4.2g fibre

Ingredients

  • 1 medium carrot, peeled and grated
  • 15g raisins
  • 15g walnuts, lightly crushed
  • 5g poppy seeds
  • Pinch of sea salt (optional)
  • Squeeze of lemon juice (optional)

Method

  1. Place the grated carrot in a bowl.
  2. Add the raisins, crushed walnuts and poppy seeds. Season with a tiny pinch of salt and a squeeze of lemon if you like.
  3. Toss gently to combine and serve immediately.

Serving & storage

Tip: Eat fresh for crunch. If making ahead, keep the nuts separate and add just before serving to maintain texture.
