Serves 1 ~5 mins Vegan 168kcal 3.9g fibre

Ingredients

  • 150g fortified soya yoghurt
  • 15g dried apricots, chopped
  • 5g chia seeds

Method

  1. Spoon the fortified soya yoghurt into a bowl.
  2. Top with chopped dried apricots and sprinkle with chia seeds.
  3. Enjoy immediately as a quick breakfast or snack.

Serving & storage

Tip: Best enjoyed fresh. If making ahead, store in the fridge for up to 24 hours and stir before serving.

Nutrition tip: Fortified soya yoghurt helps with calcium and vitamin D, while chia adds fibre and ALA omega-3. If you’re mostly plant-based, consider a vegan multivitamin that includes vitamin B12 to help cover nutrients that are harder to obtain from diet alone.
